Chinese Scallion Noodles, also known as Cong You Ban Mian (葱油拌面), features springy noodles coated in a savory sauce infused with the aromatic essence of scallions. The simplicity of this dish allows the flavors to shine, creating a delightful harmony of taste and texture.

Ingredients

  • 12 ounces (340g) fresh noodles (or dried noodles of your choice)
  • 5-6 stalks scallions, sliced into 3-4cm long
  • 4 tablespoons vegetable oil
  • 2 tablespoons vegetarian oyster sauce
  • 1 tablespoon dark soya sauce
  • 1/2 tablespoon light soya sauce
  • 1 tablespoon dark brown sugar
  • 4 tablespoons water
  • Optional: chili oil or chili flakes for added spice

Instructions

  1. Cook the noodles according to the package instructions.
    Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add the white part of scallions to the skillet. Sauté for 1 minutes until fragrant.
  4. Add in the green part of scallions to skillet. Sauté for another 3 minutes until fragrant and crispy.
    Set the scallions aside to cool. Keep the flavoured oil.
  5. In a small bowl, mix together the oyster sauce, both soy sauces, sugar and water.
    Heat the sauce in a small saucepan for 1-2 mins till sugar dissolve.
  6. In a serving bowl, add in cooked noodles, scallions, drizzle with scallion flavoured oil and sauce.
    Toss well before enjoying.
  7. If desired, drizzle with chili oil or sprinkle with chili flakes for added spice.

With it's quick preparation time and simple ingredients, scallion noodles is a perfect choice for a delicious weeknight meal or a delightful lunch.

Leftover sauce and flavoured oil can be kept in the fridge for 2-3 weeks.
