Snowskin Mooncake with Homemade Lotus Paste

Homemade lotus paste tastes vastly different from store-bought ones.


To make colorful skin, you can use bluepea flower water, beetroot powder, cacao powder, etc.

Skin Ingredients

  • 50g glutinous rice flour
  • 40g rice flour
  • 20g wheat starch
  • 20g sugar
  • 185ml milk
  • 20g vegetable oil

Lotus Paste Ingredients

  • 200g dry lotus seeds
  • 55g vegetable oil
  • 60g glucose/maltose
  • 10g sugar

Skin Instructions

  1. In a heat-proof bowl, add all ingredients, except for the oil, and whisk well to prevent lumps. Add oil and stir well.
  2. Steam mixture for 25mins.
  3. When the dough is cooled enough to handle, knead gently into a smooth dough.
  4. Cover and chill the dough for around 30 mins before using.

Lotus Paste Instructions

  1. Rinse and soak lotus seeds in water for 30 minutes.
  2. Boil the seeds for 20 minutes until soft. Blend the seeds into a smooth paste (you can add some of the water used in boiling the seeds).
  3. In a non-stick pan, add blended lotus paste, oil, glucose, and sugar. Stir paste constantly till it forms a pliable dough, about 25 mins.
  4. Cover and chill.

For a 25g mold, I use about 14g skin and 11g filling. For a 50g mold, I use about 27g skin and 23g filling.
