Slow Cooker Chicken Stew

Using a slow cooker is a great fuss-free way to get meals done.


This simple chicken stew is ideal when you do not have time to watch the stove.

Ingredients

  • 600g chicken, cut into chunks
  • 1 onion, sliced
  • 4 cloves garlic, smashed
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 teaspoon smoked paprika
  • 300ml chicken stock
  • 185g button mushrooms
  • Oil

Instructions

  1. Heat oil in a pan over medium heat. Brown the chicken pieces in the pan. Transfer to a plate
  2. Add more oil to the same pan and cook onions till softened. Add in garlic, then tomato paste, flour and smoked paprika.
  3. Add about 150ml stock to the the pan slowly, stirring to ensure no lumps formed. Boil then pour mixture into the slow cooker.
  4. Add chicken and rest of the stock into the slow cooker. Cook on low for 6 hours or high for 4 hours. Add in mushrooms during last hour of cooking.

This dish is like a stroganoff but with chicken and mushooms instead.
