Quick Treat - Easy Lemon Bars

Lemons originated in Southeast Asia, specifically in regions such as India, Burma, and China, with their cultivation dating back thousands of years.


Today, major lemon-producing countries include the United States (particularly California and Arizona), Spain, Italy, Turkey, and Argentina.

Ingredients

  • Shortbread layer
    • 115g butter, room temperature
    • 150g all-purpose flour
    • 15g icing sugar
    • 1 teaspoon vanilla extract
    • a pinch of salt
  • Lemon Layer
    • 45ml fresh lemon juice, from 1 lemon
    • 1 tablespoon lemon zest, from 1 lemon
    • 2 large eggs, and 1 large egg yolk
    • 140g white fine sugar
    • 20g all-purpose flour

Instructions

  1. Preheat oven to 175°C. Lightly grease a 8 inch x 8 inch baking tin.
  2. To make the shortbread layer:
    In a mixing bowl, mix and mash all ingredients till it resembles cookie dough. Transfer dough into the baking tin, and level out the dough. Prick the dough with a fork at regular interval to prevent puffing. Bake for 22 mins. Set aside.
  3. To make the lemon layer:
    In a mixing bowl, mix eggs, yolk, sugar, and flour together well before adding lemon juice and zest. Mix well. Pour mixture over shortbread layer. Bake for 25 mins.
  4. Leave to cool complete on a cooling rack before slicing the bars.

Lemons have been traditionally used for their medicinal properties.


They are believed to aid digestion, boost the immune system, and support overall health.


Additionally, lemon juice can be used as a natural remedy for sore throats and as a digestive tonic.
