Kimchi Jigae (Kimchi Soup)

This soup is hearty and warms you up right away.


You can control the spice level by adjusting the amount of gochujang.

Ingredients

  • 300g kimchi
  • half an onion, sliced
  • 5 cloves garlic, smashed
  • 1 stalk leek, sliced
  • 200g choice of meat (chicken/pork/beef), sliced
  • 300g silken tofu
  • 500ml dashi stock
  • 1 tablespoon gochujang
  • Optional: 150g luncheon meat

Instructions

  1. In a stockpot, add dashi stock, kimchi, onions, garlic, white part of leek, meat, and gochujang. Stir and mix well.
  2. Boil then simmer for around 20 mins.
  3. Add tofu, green part of leek and luncheon meat (if using). Simmer for 5 mins.

Together with rice, this make a fast and simple meal.
