The secret ingredients are the aromatics: garlic, ginger, onions, and leeks. These ingredients impart layers of flavor in the sauce.

Ingredients

  • White part of leek, chopped into 1-inch pieces
  • Half an onion
  • A thumb-size piece of ginger, peeled
  • 4-5 garlic cloves, peeled
  • 1 cup light soya sauce
  • 1 cup mirin
  • 1/2 cup cooking sake
  • 1/2 cup brown sugar

Instructions

  1. Place leek, onion, ginger, and garlic on a roasting pan and grill for 10 mins.
    Alternatively, you can roast them in a pan over the stove till slightly charred.
  2. Add soya sauce, mirin, cooking sake, brown sugar, and roasted aromatics into a saucepan.
  3. Bring the sauce to a boil without covering the saucepan. Simmer at low heat for 10-15 mins.
  4. When the sauce is cooled, filter off the vegetables and store the sauce in a bottle.

While a simple teriyaki sauce can be made with pantry staples, the aromatics really elevate the taste.
It's alright if you do not have all the aromatics listed, just add whichever you have on-hand.
