Stir Fry Char Siew with Eggs on Rice

I first had this dish in Hong Kong.


It's a super easy old favourite.

Ingredients

  • 200g charsiew, diced
  • 4 eggs, beaten
  • Oil
  • Serving with rice

Instructions

  1. Heat oil in a pan over medium heat. Add in diced charsiew and stir-fry till slightly charred.
  2. Add beaten eggs into the pan and scramble them slightly. Cook till the eggs are just set.
  3. Serve the dish over a bowl of hot rice and garnish with some spring onions.
